Massaged Kale Salad

Ingredients for Blackened Seasoning

1 large bunch of raw kale

1/4 cup sliced raw almonds

1/2 cup of cherry tomatoes

1/2 lemon, juiced

1/4 cup extra virgin olive oil

Sea salt and fresh black pepper

Shaved pecorino cheese (optional)



1) Remove kale leaves from stems and chop, The stems of kale are way too tough for your digestive tract to break down.

2) Add lemon juice and sea salt to chopped kale leaves. Massage with hands for 5 minutes

3) Toast almond slices in a small pan for 2-3 min until golden brown and set aside

4) Grate pecorino cheese

5) Chop cherry tomatoes

6) Squeeze kale to release juices

7) Put kale in wire mesh strainer to strain again

8) Put kale back in bowl and add olive oil, cherry tomatoes, pecorino cheese and toasted almond slices.

9) Serve and garnish with more cheese and almond slices
