Chopped Crunchy Veggie Salad

Prep time 25-30 min


Ingredients for Salad

1 Cup sliced radishes

1 cup cooked and cooled corn off the cob

1 cup chopped cucumbers

2 scallions thinly sliced (both white and green parts)

1/3 cup toasted sunflower or pumpkin seeds

1/2 cup crumbled feta cheese

2 tbsp of chopped mint

Ingredients for Dressing

2 tbsp of fresh lime juice

2 tbsp of extra virgin olive oil

1/4 teaspoon of sea salt

1/4 teaspoon of chile powder

Ground black pepper to taste



1) Chop and slice all veggies and scallions and add to a medium bowl

2) Mix in feta cheese

3) Toast sunflower or pumpkin seeds in a pan for 2-3 min and add to salad

4) Whisk lime juice, olive oil, chile powder, salt and pepper in a small bowl. Pour over salad and add mix

5) Garnish with chopped mint leaves
