Blackened Mahi Mahi sautéed with Fresh Tomato and Basil Sauce

Ingredients for Blackened Seasoning
1 1/2 tbsp paprika
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp thyme
1 tsp cayenne pepper
1 tsp basil
1 tsp cumin
1 tsp sea salt
1/2 tsp oregano
Ingredients for Fish and Tomato and Basil Sauce
3/4 to 1 pound wild Mahi Mahi or Halibut
1 pint of red cherry tomatoes chopped
1 pint of yellow cherry tomatoes chopped
1/2 fresh basil chopped
2 minced garlic cloves
1 tbsp olive oil
1 tbsp fresh thyme chopped
Sea Salt and cracked black pepper to taste
Instructions
1) Mix all ingredients together for blackened seasoning. Dip both sides of the fish in the seasoning and set aside
2) Chop all tomatoes, garlic, basil and thyme
3) In a large pan heat up olive oil on medium heat
4) Add garlic and sauté for 1-2 min
5) Add both red and yellow tomatoes
6) Add fresh basil, thyme and salt & pepper.
7) Mix and cover on medium heat for 10 min to cook tomatoes down
8) Add fish to the sauce and cook 6 minutes on each side
9) Remove from pan and serve over basmati rice or whole wheat pasta
